the dinner diary

Yes!
I am a planner.
This is our ongoing "Dinner Diary" of sorts.

I find when we don't have a plan for the week and month my hubs and I kind of spiral into spending more money going out to eat and eating junk that doesn't always settle with my insides.

Please pardon my scribbles, but I jot down on Fri, Sat or Sun and flip through the cookbook and write out about 3 dinners, and 2 breakfast items as well as what can be used leftover for lunches. With that a snack item that can be fillers..Which having Honey Crisp apples in the fruit basket is always a must!!
Also, I try to choose meals that use similar ingredients. So I can use up all my ingredients before going bad.

What I love about this is throughout the month I have meals that I may not get to one week but I can move it into the next week. I place checks as I use the recipes so I can quickly move through my list when meal planning each week.

Writing this down may seem a little extreme, but when I move into zombie busy weekends and I have no clue how to prepare meals for the week, I peek back a few pages and set up a menu on things I know were dinner successes :)

Woke up Saturday morning (after a couple cups of coffee or 3 :) and made these blueberry waffles. 
They are dairy free and made with ground macadamia nuts and coconut flour. Then sweetened with a hint of delicious maple syrup. These make about 4 whole waffle rounds. 
What you don't eat can be frozen and them pop them in the toaster for the days ahead. 
I was kinda surprised how delicious these were. 
My husband said they mimicked a vanilla biscotti..After he mentioned that I was like--yeah! and loved them all the more.
You could use the triangles for savory sandwich ideas or dessert after dinner dipped in Nutella..blow me down!! 



and then there is this guy..
O my goodness this was delicious. Another breakfast dish that lasted throughout the week.
This is Sausage Quiche with Sweet Potato Crust.
And it is just that.
After layering thin slices of sweet potato around the base of the pie plate, I was pleasantly surprised the slices dispersed through all levels of the quiche which added a slight sweet note to the sage infused sausage.
There is no smothered cheese on this dish and I actually didn't even miss it.


This is a Mexican Chicken Chowder.
OK, not the prettiest picture but you do see the layers of carrots, sweet potato and short-cut Rotisserie Chicken (cut corners when you can) 
It does have a greenish tint because that my friends is a homemade tomatilla salsa..guys this is legit!
Once again a natural sweetener to offset the brightness of the tomatillas was the sweet potato. The white dollop of not daisy but plain Greek yogurt. 
This was my lunch meal this week as well as a leftover for one night. 


Tomorrow night is a shared meal with company and as I warn most our trusted guests its a new meal for everyone so we welcome honest feedback. So the adventure continues..
